Savoury bacon and cheese scones

Ingredients

3 cups self-raising flour

80g softened butter

Pinch of salt

1 ¼ cup of milk

1 Cup grated cheese

3 rashers of bacon, finely chopped 

1 tbsp  Victoria Olive Grove Extra Virgin Olive Oil

Method

  • Preheat oven to 200C and line a baking tray with baking paper
  • Heat a non-stick frying pan over a medium to high heat. Add Victorian Olive Groves olive oil and allow to heat then add the finely chopped bacon and cook until golden
  • Transfer bacon to a plate lined with paper towels and allow to cool
  • Sift the flour into a large bowl. Use your fingertips to rub the butter into the flour until a breadcumb-like mixture forms
  • Add the cheese and bacon to the mixture
  • Make a well in the centre of the mixture then add 1 cup of milk. Mix with a butter knife until combined, forming a soft dough. Add more milk if necessary
  • Turn your dough onto a lightly floured baking mat or kitchen benchtop. knead the dough gently until smooth, taking care not to over work the mixture
  • Pat the dough down until approximately 3cm thick. Using a round cookie cutter, press down to cut 15 rounds of dough
  • Place dough rounds onto your baking tray, ensuring enough space is left for the scones to expand as they cook
  • Glaze the rounds with a small amount of milk
  • Bake for 25 minutes or until golden brown
  • Serve warm from the oven with a little extra butter
